Kolkata, Oct 3 (IANS) Here are the recipes of two simple but popular Bengali food items consumed during Durga Puja festival.
1. Beguni – Eggplant fry
Ingredients:
Bengal gram flour – 1/2 cup
Red chilli powder – in very small quantity
Eggplant – 150 gm (4-5), longitudinally cut slices, with the stem attached
Oil
Salt to taste
Preparation:
Mix Bengal gram flour with water to create a batter. Add a little salt for taste. Dip eggplant slices in the batter to coat and add a little red chilli powder on each side. Deep fry in very hot oil until crisp, drain on kitchen towel. Serve piping hot.
2. Luchi – a Bengali version of the north Indian puri
Ingredients:
Maida or fine wheat flour – 1 kg
Refined oil or Ghee – 4 tablespoons
Salt to taste
Warm water to knead the flour
Oil
Preparation:
Knead the flour, with oil and salt with warm water. Make small balls of dough. Flatten these into circular shapes and roll out with a rolling pin. Deep fry one by one and serve piping hot with side dishes.
